INGREDIENTS:
2 tbsp niter kibbeh (Ethiopian spiced clarified butter)
1 large onion, chopped
2 cloves garlic, minced
1-inch piece ginger, minced
2 tbsp berbere spice
500g sirloin beef, cut into 1-inch cubes
Salt, to taste
Lemon juice, to taste
Injera, for serving
Instructions:
Prepare the sauce: In a saucepan, melt the niter kibbeh over medium heat. Add onions, garlic, ginger, and berbere. Cook on medium-low heat for 30 minutes, stirring occasionally, until onions are deeply caramelized. Blend lightly, leaving some texture.
Cook the beef: Season beef cubes with salt. Heat a cast-iron skillet until hot. Sear beef in batches for 3–4 minutes per side until
golden brown.
Combine: Transfer seared beef to the onion sauce. Add a splash of lemon juice and stir to coat evenly.
Serve: Serve hot with injera.
Tips:
Store leftovers in an airtight container in the fridge for 3–4 days.
Reheat gently on the stovetop with a little water or broth to retain tenderness.
