These buttery Easter Bunny sandwich biscuits are filled with bright lemon flavor and make a delightful treat for the whole family—perfect for Easter celebrations.
Ingredients
250 g unsalted butter (room temperature)
150 g icing sugar (plus extra for dusting)
Zest of 2 lemons, finely grated
2 egg yolks
350 g plain flour
100–200 g lemon curd
Instructions
Beat the butter and icing sugar together until smooth.
Add the lemon zest, egg yolks, and plain flour, then mix until a soft dough forms.
Shape the dough into a flattened ball, wrap it, and refrigerate for at least 1 hour.
Preheat the oven to 160°C (fan) and line baking trays with parchment paper.
Roll the dough to about ½ cm thickness and cut into bunny or round shapes. Cut a small shape in the center of half the biscuits.
Bake for 12–14 minutes until lightly golden and let cool.
Spread lemon curd on the solid biscuits, place the cut-out biscuits on top, and dust with icing sugar.
